Wonderland Events, Oxford 2008 - 2009 My own independent catering and events business, catering for parties up to 25 single-handedly. Functions included lunch parties, dinner and drinks parties to frozen freezer food for those that need a hand in the kitchen.
Villandry: Bicester Jun-July 2009 I worked the front section of the kitchen alongside six other chefs’ covering up to 600 to 800 covers per service. • I had to be there early hours from 7 preparing salads, Croque-monsier, Chicken and avocado mix, potted salmon or create a Cesar dressing and various others. • Keep on top of the service and waiting staff in such a large environment. • Presenting everything to the customer and company standards.
The Jericho Tavern: Oxford Aug–October 2008
I served as a sous-chef for 3months and loved working at the Jericho.
• I was on several occasions left in sole charge of the kitchen having to take into account each and every order and serve it on time with high presentation standards of the customer, company and myself. Being left in charge of the kitchen gave me many opportunities to develop and experiment many of my own inventions and ideas, which there was a high demand for.
• I had to work hard in stressful, high pressure situations.
